Celebration Cupcakes



What makes them celebration cupcakes? Cupcakes are perfect for every occasion - and if you don't have a special occasion to make them for... Bake them anyway and celebrate the fact that you have cupcakes! 

The recipe is from this book and very easy to make and adapt for different flavours.

Ingredients:

150g softened butter
150g caster sugar
175g self raising flour
3 eggs

Instructions:
  • Preheat oven to 180°C
  • Fill cupcake tin with with 12 cupcake cases
  • Mix all the ingredients together, with an electric hand whisk if possible
  • Divide equally among the cases and bake for 18- 20 minutes
  • Cupcakes are done when they are firm to touch, and a knife/skewer inserted comes out clean
